He says "I'm finicky"

Last night I got a lecture by the BF in front of his mom and brother about how I am "the most finicky eater he knows." Needless to say, I was embarrassed and ashamed. I don't think of myself as a "finicky eater," quite on the contrary, I love a lot of foods the BF would rather do without (i.e. tomatoes, broccoli, salad, mushrooms, apples, tangerines, pasta salad, zucchini casserole, yams, etc.). Reaching up a generation in the gene pool, his mom also has similar tastes. And so when we were discussing "having food on hand" and being ready at
a moments notice to make a nice dinner without running to the store for the ingredients each time, a lot of her suggestions came up in my "dislike/semi-dislike/would rather eat something else" category.


Every time I make dinner I feel obligated to cater to everyone's tastes, and unfortunately Chris and I have extremely different tastes. He likes meat, and lots of it. I like veggies and bread. I have been trying to find some simple meals that satisfy us both. So far we have, meatless spaghetti, chicken and noodle soup (homemade), sauteed veggies, meatloaf, roasted chicken (including several recipes for the crock pot), several Chinese dishes with rice, and a few others that I have probably forgotten.

Last night Chris's mom suggested Chile, and well, little did she know that I despise chili (ask my family, when I lived at home they would save up their Chile urges until I wasn't home and make it, even in the middle of 110+ degree heat!). She then suggested "white" chili with white beans and chicken. I said that I didn't mind it as much, but I still hate the thought of making dinner when it is something I only remotely like to eat. It went down hill after that with Chris saying those shame-evoking words, "she is the most finicky eater I know" and his mom looking at me with a bewildered face.

And my heart sank. Am I really that picky? Is it horrible to eat only vegetables for dinner? We did it all the time in Arizona, but maybe Alabama is different. Maybe she doesn't have confidence in me to cook nutritious meals for her son, and rightly so, because I suck at cooking and the things I like to cook, he doesn't find satisfying. And maybe she doesn't realize that I have this little thing called Diabetes to contend with, which seems to be happier if I limit the carbs and focus on the veggies.

I have yet to come up with an ingenious plan to incorporate meat and stuff the BF likes into meals I like to make, without slipping under his "satisfied" line. And Diabetes, well, he makes due for the most part, although sometimes unwillingly.
